Olas & Chanclas | Giant Chocolate-Toffee Cookies I’m not sure if I’ve mentioned this yet, but I’m a no-nuts-in-my-desserts person. I just so happen to be married to the same kind of person (thank goodness!!), so whenever a recipe calls for any type of nut (pecan, walnut, peanut), I omit it and just add extra of something else so the consistency stays the same.

Don’t get me wrong — I LOVE nuts in general (um … OK, OK, keep your mind out of the gutter, folks, you know what I mean), just not in my baked goods (I adore them in salads, actually) or ice cream. So that’s my disclaimer to anyone looking for a dessert containing nuts on this blog. It ain’t gonna happen. I take that back. I’ll let ya know they’re part of the ingredient list, but I’ll always leave them out.

Last week was a real crappy one for our house. It started Wednesday morning, when we discovered fraudulent charges on our bank account. When you’re on a super-tight-to-the-penny budget (like most folks these days), missing $300 unexpectedly is no bueno.

Thursday morning we lost power at the house. Not an issue, usually. But when you’re working from home and have a pile up of files to edit and get through production, it throws your entire day off. But not like getting in a car accident on your way to pick up your daughter from school. Yup, that’s what happened later in the day. And I was at fault. Boo. Thank goodness for car insurance and our $500 deductible. Ah, but remember our to-the-penny budget? We’re screwed now.

The end of this month can’t come soon enough. Or at least my office lottery pool needs to hit at some point. That would be all kinds of awesometastic goodness. One can dream, right?

Olas & Chanclas | Sweet & Spicy: Dark Chocolate Chip Cayenne Cookies

After my disastrous roasted chicken fiasco last night (I will post about it because the flavors are amazing, but for some reason my chicken didn’t cook through and was pretty raw once we cut into it), I wanted to redeem myself. And it just so happened to be a torrential downpour today (yay, finally!), so I was hankering for some homemade cookies. Plus, just about every Friday the hubs has a meeting with his crew and he takes in something I’ve made for the guys to munch on and today he didn’t have anything, so I felt bad. I wanted to bake something and run it up to his office so they could indulge a little at the end of their day.

I’ve had this recipe pinned to my Sweet board for a while now and I gotta tell ya … if you like dark chocolate and spice, this little tasty nugget is for you.

Allow yourself some time, ‘cuz this spicy chocolatey goodness has to chill in the fridge for an hour before you can throw it in the oven.
